Make Your Own Popsicles

What an incredibly beautiful summer we are having in Ontario.  Now, with only a week away from the start of a new school year, summer feels like it’s quickly disappearing.  I’m trying to hold on to our summer fun as long as i possibly can.  Summertime is never complete without popsicle treats.  What better popsicles than those you can make at home yourself.  I have made a variety of tasty popsicle treats this summer and would love to share with you two of my favourite flavour creations.    They are sweet, refreshing and best of all, they’re made with summer fruits. There’s still a few weeks left I’m sure of this beautiful summer weather.  So,  here are two easy recipe ideas that you can use to make your own popsicles that everyone will love.

Blueberry Mango Popsicles

Ingredients:

  • blueberries, 1 cup
  • mangoes (fresh or frozen), 1 cup
  • 1 cup mango fruit juice
  • 1 cup unsweetened almond milk
  • 2 tablespoons honey
  • 1/3 dup sugar (can decrease measurement to 1/4 cup)

Directions:

In a small saucepan, add blueberries, sugar and a couple teaspoons of water.  Stir until sugar melts and mixture begins to boil.  With the back of a wooden spoon, squish most of the blueberries so that the juices flow.  Add this mixture to the bottoms of your popsicle molds.  In a blender, add the remaining ingredients and blend on high until all the ingredients are mixed together and you have a smooth consistency.  Add this mixture to the popsicle molds. Some of the blueberry mixture will swirl into the mango mix.  Freeze for about 1-2 hours.  When popsicles are somewhat frozen, add wooden popsicle sticks in the middle of each mold.  Continue to freeze popsicles for several hours until completely frozen.

Raspberry Mango Popsicles

Ingredients:

  • raspberries (fresh or frozen), 1 cup
  • 1 cup mangoes (fresh or frozen)
  • 2 cups mango tropical juice
  • 1 cup unsweetened almond milk

Directions:

In a blender, add all of the listed ingredients and blend on high until all the ingredients are mixed together and you have a smooth consistency.  Add this mixture to the popsicle molds.   Freeze for about 1-2 hours.  When popsicles are somewhat frozen, add wooden popsicle sticks in the middle of each mold.  Continue to freeze popsicles for several hours until completely frozen.

Make your own popsicles for any occasion.  Also, I love making these with my children and I let them get creative and pick their own flavours.  The popsicle colours are so vibrant and beautiful.  I often like to give my guests popsicle treats when I’m entertaining.  I like to get a large bowl (a stainless steel bowl would be perfect), fill it up with ice and lay the popsicles around the ice.  This looks really impressive!
